30 minute chicken enchiladas 🐔 -makes 4 large enchiladas- 1 small white onion, diced 2 cooked chicken breasts (or 2 breast of rotisserie chicken), shredded 1 small can green chiles 1u002F4c black beans 1 jar enchilada sauce of your liking (I used Siete), divided 4 flour tortillas 1u002F2c-1c shredded cheese Toppings as desired: cilantro, avocado, sour cream, salsa Preheat oven to 350. In a pan, drizzle oil and cook onions until translucent (about 5 mins). Add chicken, green chile, black beans, and 1u002F2c enchilada sauce. Cook for about 5 minutes of medium-low. In a baking dish, spray with cooking spray and add a few spoonfuls of enchilada sauce to bottom of dish. Assemble enchiladas. Top with cheese and bake for 20 minutes or until cheese is completely melted.
